A Tale of Two Zucchinis

Once upon a time we had two zucchinis that needed to be eaten.

Zucchini #1 became pancakes
Recipe: 1 smaller zucchini, 1/2 c milk, 1 pouch of cornbread mix (6.5oz), 1 egg
  • Chop the zucchini and put it through a food processor. Microwave the mix for 2 mins and drain.
  • Mix everything together and let sit for 5 minutes.
  • Heat oil on stove, low-ish temperature.
  • Use about a soup spoon scoop of mix and cook each side for about 2-3 minutes. I adjusted a lot to get desired crispiness and cooked all the way throughness.
  • Eat immediately or save and microwave later.
  • (Makes 1-2 dozen, depending on size)
Delicious with chicken curry :-D

Zucchini #2 became a new creation I'm calling "The Zucchini Boat of Wonderful Things." It was good, but didn't turn out as amazing as the pancakes, so I'll try adjusting things before sharing it with the world.
